Pad Thai Noodles-Vegetarian

Ingredients

1 pk Brown rice noodles 

Olive oil

1 tbsp oregano and parsley

1 Chopped onions

3 Carrots chopped in thin long stripes

20-30 Broccoli florets

20 Beans cut 2 inches long

1 Red and 1 green bell pepper cut thin and long

1 cup Bean sprouts 

salt to taste

pepper to taste

4-5 tbsp Soy sauce

1 Lemon juice 

1 tsp honey 

Crushed roasted peanuts   

Tofu 

Directions

-Boil Rice noodles for 10 minutes

-Strain

-Sprinkle some olive oil on noodles

-Add a tbsp of olive oil in a wok

-Add oregano and parsley leaves

-Stir fry chopped onions, carrots, broccoli florets, beans, bean sprouts, red and green bell peppers

-Add salt and pepper to taste

-After 2-3 minutes, add a mix of soy sauce, lemon juice and honey 

-After a minute, add noodles and crushed roasted peanuts   

-Add tofu with noodles
